Cilantro/Coriander is an annual herb. In many places its fresh leaves are called cilantro, while its dried seeds are known simply as coriander. Both parts of the plant are culinary staples.

- Leaves (Cilantro): Fresh, herbaceous, and citrusy, though some people perceive a "soapy" taste due to the OR6A2 gene variation.
- Seeds (Coriander): Warm, nutty, and spicy, often used whole or ground in spice blends.
Cilantro is a fast-growing, cool-season plant that easily bolts (goes to seed) in hot weather. It prefers full sun to partial shade with well-drained, fertile soil. To harvest snip outer leaves as needed for cilantro. For seeds, allow the plant to flower and dry out completely before collecting.
Cilantro may also provides a strong dose of antioxidants and vitamins A, C, and K. It can support the body's natural detoxification pathways, helps lowers inflammation. However traditionally used in large medicinal amounts, it can act as a natural blood thinner. It is often studied as a natural chelating agent, cilantro compounds can bind to heavy metals (like mercury and lead) and assist your body in safely flushing them out of tissues. It may help settle an upset stomach, reduce bloating, and decrease symptoms of irritable bowel syndrome (IBS). Cilantro may also help promote insulin sensitivity, helping to lower blood sugar. It acts as a mild diuretic and can help lower blood pressure and manage cholesterol levels. The herb contains dodecenal, an antimicrobial compound that is highly effective at neutralizing Salmonella and other foodborne bacteria.
However it may slow down blood clotting, consuming excessive amounts can increase bleeding risks, especially if you have bleeding disorders or are scheduled for surgery.
