German Chamomile is a fast growing annual herb in the asteraceae family, that is widely used in herbal teas and essential oils. It is celebrated for its soothing properties and distinctive daisy-like flowers with hollow, cone-shaped centers. Chamomile has feathery, finely divided leaves and flowers with white petals surrounding a raised, yellow, hollow center. It can yield a potent, deep blue essential oil rich in chamazulene, which forms during the distillation process. If brewed it has a mildly sweet, floral, and slightly earthy tea.
When applied topically in creams or balms to soothe minor skin irritations, eczema, and inflammation. It is also traditionally used to calm upset stomachs, bloating, and indigestion. Chamomile thrives in full sun to partial shade and prefers well-draining, slightly acidic to neutral soil. Seeds require light to germinate; scatter them on the soil surface and press down lightly and can be planted directly into the garden after last frost.
To harvest, pick the flower heads frequently—ideally when they are in full bloom and the petals are beginning to bend backward. This is when essential oil content is highest. Then spread the flowers in a single layer on a screen in a cool, dry, dark space to dry thoroughly before storing them in an airtight container.
